Transcription: Since leeks trap dirt between their leaves as they grow, it is a good idea to wash them thoroughly. Cut away the top and root and then slice down through the middle. Separate the leek by hand and thoroughly rinse the leaves under cold running water. An optional technique is to cut off the root end and make a two-inch X incision in the base. Place the leek in cold, aciduated water for 10 to 20 minutes. The acid it in the water will help to leach out the dirt.
